Recipe: Easy 3 Minute Steamed Eggs

This is probably the easiest recipe I’ve ever posted on my blog. I wouldn’t necessarily call steamed eggs meal prep since I always eat this immediately while it’s still hot! It’s usually a snack for when I’m hungry and don’t want to cook anything else. All you need is a microwaveable bowl, fork, and a microwave 🙂

Ingredients (1 serving):
– 2 large eggs
– about 1/4 cup of water
– salt and pepper to taste
– 1 green onion stalk diced (optional)

Instructions:
– In a microwaveable bowl, whisk together all ingredients
– Cover bowl with either a wet towel or microwave cover
– Microwave for 3 minutes
– Add more salt and pepper to taste if not seasoned enough

P.S. Try substituting salt with chicken broth for a different taste!
