Meal Prep: Sweet Potato Hash

It’s week 15! Decided to take inspiration from Buzzfeed’s video on their sweet potato hash and add my own flavors! You can view the original article here.

Also, sorry for the delay in my blog posts! I’m usually at the top of my stuff and post my recipes every Monday, but I’ve been busy working on content for my YouTube channel and apartment hunting. Cheers to Tuesday!

Ingredients (5 servings):
– 5 medium eggs
– 2 medium sweet potatoes, diced
– 1 red bell pepper, diced
– 1 yellow bell pepper, diced
– 1 green bell pepper, diced
– 1/2 red onion, diced
– 1-2 jalapenos, diced
– 1 tsp rosemary
– 1 tsp salt
– 1 tsp garlic powder
– 1/2 tsp pepper
– Pinch of paprika

Instructions:
– Cook sweet potatoes at medium in a covered pan for 8 minutes (stir every 2 minutes)
– Add in bell peppers, onions, and jalapenos
– Mix evenly, then add rosemary, salt, garlic powder, pepper, and paprika
– Cover and cook for another 4 minutes (stir every 2 minutes)
– Taste and add more salt/pepper if necessary
– Cook 5 eggs over easy in separate pan with light olive oil, salt and pepper
