Meal Prep: Cauliflower Fried Rice

New week, new recipe! Week 8 has arrived and once this week ends it will officially be 2 months since I’ve started my new meal prep routine. I can successfully say that most of the meals I’ve consumed have been home cooked, and although I eat out on the weekends, I’ve saved a ton of money by not eating out as often as I used to. I count that as a huge accomplishment! I tried out cauliflower fried rice this week! I highly recommend investing in a food processor when making the cauliflower rice if you’re trying to save money. I bought the frozen pre-packaged cauliflower rice and it was kind of expensive for 3 servings.

Ingredients (3 servings):
– 1 bag frozen Green Giant cauliflower rice medley
– 1 broccoli crown, chopped into smaller pieces
– 1 carrot, peeled and diced
– 2 stalks green onion
– 1 chicken breast, cubed
– 2 eggs
– 3 cloves minced garlic
– 1 tbsp sesame oil
– 3 tbsp soy sauce
– Salt & pepper to taste

Instructions:
– Heat pan, add sesame oil and garlic
– Add chicken breast, lightly salt
– Add carrots and broccoli, stir
– Once chicken is fully cooked, add bag of cauliflower rice, stir
– Add soy sauce and pepper to taste
– Push everything to the edge of the pan, add eggs to the middle of the pan
– Fold eggs into the rest of the rice
– Garnish with green onion
