
Week 6 of meal prepping and I’m back with another new recipe! The weather has been great, the sun is out, and I’m feeling incredibly good. I’ve decided to try out eggs as my protein of choice for this week and it’s actually going pretty great! I am super in love with my egg scramble recipe and I can see myself going back to this recipe for future weeks. Yum!
Ingredients (4 servings):
– 8 medium eggs
– 1 green bell pepper
– 1 red bell pepper
– 1/2 white onion
– 4 slices lean ham (optional)
– Shredded monterey jack cheese
– Salt & pepper
– Crushed red pepper (optional)
Instructions:
– Dice bell peppers, onions, and ham (optional), throw onto hot pan
– Once cooked, set aside and oil pan
– Crack eggs onto pan
– Salt and pepper to taste
– Toss in cooked vegetables and ham
– Mix and scramble until cooked
– Lower flame and sprinkle on cheese
– Mix until melted
– Add crushed red peppers (optional)
