Meal Prep: Zucchini Alfredo

Week 2 is about to begin and I’m trying all the different variations of the incredibly popular zoodles everyone online seems to be raving about! I have no updates in terms of any changes yet, so here’s my recipe for the zucchini alfredo!
Ingredients (4 servings):
– 4 zucchinis
– 5 white mushrooms
– 1/2 white onion
– 2 broccoli crowns
– 2 small chicken breasts
– 3 minced garlic cloves
– Olive oil
– Crush red peppers
– Salt & pepper

– Preheat oven to 375 degrees
– Salt and pepper chicken to taste
– Oil pan
– Bake at 375 for 30 minutes
– Let chicken rest, then cut into slices

– Spiral zucchini, drain excess water Processed with VSCO with f2 preset
– Heat up zoodles in pan, salt and pepper before it becomes overcooked
– Put zoodles aside, drain excess water
– Dice 1/2 an onion
– Rinse mushrooms, and cut into slices
– Rinse broccoli, cut into florets
– Heat up pan on medium, add olive oil
– Throw on minced garlic and onions
– Add mushrooms, stir
– Add broccoli, stir
– Add sauce and chicken
– Add salt and pepper to taste
– Add crushed red pepper (optional)
