Meal Prep: Zucchini Noodles

Let the first week of meal prepping begin!

I have to admit, I walked into this without any significant plan or idea or where to start. I bought a zucchini spiraler and decided I’d give it a try on the first week of prep. My overall goal is to really cut down on the carbs and sugar in my every day diet. This is going to tough considering the amount of coffee and tea I drink daily, but here goes nothing! I’ll be sharing my meal prep recipes according to how I prepared them, so feel free to prepare them your own way. Here’s my recipe to the easy zucchini spaghetti & meatballs!

Ingredients (4 servings):
– 4 large zucchinis
– 1/2 white onion
– 1 bag of spinach
– 5 white mushrooms
– 3 cloves minced garlic
– 1 can of spicy tomato sauce
– 12 frozen turkey meatballs
– Olive oil
– Salt & pepper

– Rinse spinach, set off to side to dry
– Spiral zucchini, drain excess water
– Heat up zoodles in pan, salt and pepper before it becomes overcooked
– Put zoodles aside, drain excess water
– Dice 1/2 an onion
– Rinse mushrooms, and cut into slices
– Heat up pan on medium, add olive oil
– Throw on minced garlic, spinach, and onions together
– Add mushrooms, stir
– Drain any excess water in pan
– Add turkey meatballs
– Once meatballs are warm, add sauce
– Salt & pepper to taste

*I recommend not mixing the zucchini noodles (zoodles) in with the sauce if you’re planning to meal prep them because if the zoodles are overcooked, the sauce will become very watery! If you’re eating it fresh, go ahead and mix it all in. Enjoy!
